Mindy's Beet Soup with Roasted Garlic



Method

Cut off beet greens and scrub beets well. Place beets and garlic in a saucepan and cover with water. Simmer 45 to 55 minutes or until tender. Remove beets and reserve ½ cup of cooking liquid. Peel beets and chop. Place chopped beets, roasted garlic, salt, sugar and buttermilk in a blender. Blend until smooth. Heat through.

4 medium beets
2 cloves roasted garlic, peeled
½ tsp. salt
½ tsp. sugar
1 ½ cups buttermilk
